Tiny Tacos Veggie Version

Tiny Tacos go meatless and they’re just as delicious and have just as much flavor as the meaty version. Veggie Tiny Tacos use refried beans and they taste great if you make your own refried beans.  Watch out though, this version is also addictive.  I made them this morning for my blog and I ate every one of them! Tiny Tacos would be a perfect appetizer at any party.

Nothing beats Taqueria Del Sol’s Cheese Dip with fresh jalapenos.  Hot and crispy chips are perfect for dipping and so hard to stop eating.  Be sure and save room for their delicious fish tacos!

Tiny Tacos and Cinco de Mayo!

What a great idea, Tiny Tacos.   These are delicious, easy, and would make a great appetizer or even dinner.  I couldn’t stop eating them!  Thanks to Susan at the Timeless Gourmet for letting me reprint her recipe.  I can’t wait to try more of her recipes because this was so good!

You start with Tostitos Scoops, add meat or beans if you are a vegg, and then add your favorite toppings.  I topped mine with cheese and fresh salsa.  Pop them in the oven for 5 minutes, serve hot, and enjoy!

Deviled Eggs are a Southern Thing

Chances are you were either born or raised in the south if you love Deviled Eggs and I certainly do.  They’re the perfect accompaniment for holiday dinners or even appetizers at a party.  This recipe comes from my sister-in-law, Barbara.  She’s a great cook and sets the most beautiful table ever when she entertains.  She pulls out all the stops.  This is a picture of her Easter table and the recipe for her yummy Deviled Eggs.

Nordstrom Big Easy BBQ Shrimp

My birthday bash was held at my daughters apartment in Buckhead this year.  I am the luckiest mom ever. They made a full gourmet meal starting with wine, appetizer, salad, and my favorite food, shrimp! That’s the first dinner they’ve ever made 4 me and I will always remember it.  (Notice a little face at the sink checking out the food?!)

For starters, we enjoyed a glass of wine and an appetizer of chips and salsa from Tin Lizzy’s, a great Mexican restaurant in Buckhead.  Their chips are thin and crispy and have some secret spices sprinkled on top that make them soooo good.  The salsa is very fresh and delicious. Next was an awesome salad topped with 3 Vinegar Vinaigrette from Frank Stitt’s restaurant in Birmingham.

The the main dish was Nordstrom Big Easy BBQ Shrimp served with Yukon Gold mashed potatoes, and sliced baguettes for dipping.     Those were the best shrimp I have ever had.  Loved them and the entire meal! What a special treat and special birthday 4 me.

Do You Fondue?

In honor of Valentines Week, I am going to feature some foods that would be fun to have for a Valentines Day celebration.  Wine, too is always good! Today’s recipe is a yummy Cheese Fondue from a restaurant in New York City, called Dip.

Years ago, I went to Europe and got to have Swiss Fondue in a little hole in the wall village in Switzerland and it was the best fondue I have ever had in my life!  Nothing can compare to that, but this is good.

California Pizza Kitchen Pizza Dough

Nothing beats going out for pizza but sometimes it’s fun to stay home and make a few pizzas with lots of different toppings. I’ve made a few doughs over the years but this one is my favorite of all time.  It’s really easy but you have to plan ahead because it needs to sit over nite in the frig. It’s great with a marinara sauce and mozzarella cheese or if you have some of the CPK cookbooks, they give you lots of creative ideas.  A lot of their recipes are on the internet, too.  If you make this, let me know how you top yours!

Cincinnati Chili Dip 4 Super Bowl Sunday

Hope your favorite team wins the Super Bowl tonite.  As 4 me, I’ll be watching but I’m not in it to WIN it, I’m just in it 4 the commercials!  This recipe is from my favorite recipe site, Epicurious and it was contributed by Dave Lapham of the Cincinnati Bengals.

You can make this dip ahead and warm it up just in time for the game.  Enjoy them both!

Buffalo Grilled Shrimp with Blue Cheese Dip

Yumm!  Last nite I made these EASY and delicious shrimp.  Perfect as an appetizer or a main dish.  They are spicy but cool down when you dunk them into the blue cheese dip.  What’s really nice is that they are not fried.  I ADORE anything fried but I can always handle a few less calories.   I served them with a baked potato and brussels sprouts with buttered pecans.  Everything was good, but the shrimp were the major winners!  Shrimp always win in my book though.  These would be great for your Super Bowl celebration.  Let me know if you think they are as delicious as I do!  TIP: Use refrigerated Blue Cheese Dressing to make this really EASY.
