California Pizza Kitchen serves a mixed green salad and tops it with a delicious Dijon Balsamic Vinaigrette Dressing that’s so easy to make. All you need are a few ingredients and a whisk. Don’t be tempted to throw these ingredients into a food processor because it emulsifies the dressing too much and it becomes too thick. When you’re ready to serve this salad, don’t toss it, drizzle the dressing on the top so you can enjoy the flavor even more.
California Pizza Kitchen Field Greens Salad
baby salad greens
cherry tomatoes, cut in half
sliced pears, candied walnuts or pecans,or blue cheese optional
Dijon Balsamic Dressing
1/2 cup balsamic vinegar
2 tablespoons Dijon mustard
1 tablespoon minced garlic
1/2 teaspoon freshly ground black pepper
1/4 teaspoon salt
1 1/4 cup plus 2 T olive oil (I used all canola oil and 1/4 cup olive oil)
1. In a mixing bowl, use a whisk to stir together the vinegar, mustard, garlic, pepper, and salt. Whisking continuously, slowly pour in the olive oil. Cover and refrigerate until ready to use.
2. Pu the salad greens in a large mixing bowl or individual serving bowls. Top with desired ingredients and drizzle with dressing.
