Crazy Corn

Food trucks and street food are all the rage in Atlanta . Crazy Corn is straight from the streets of Mexico and it’s easy to make.  Grilling corn brings out the natural sugars and the flavor is amazing.  Try adding some Mexican street toppings.  To die for.

This would be perfect for a 4th of July barbecue or any time this summer when corn is plentiful and at its peak.  This recipe was featured on the Today Show.

Tyler Florence Ultimate Potato Salad

Pure comfort food.  That’s what potato salad is for me.  Problem is I get so comforted, I can’t stop until I hit the bottom of the bowl and that translates to where it ends up on me!

I’m hooked on Tyler Florence and in honor of  Football season and tailgating being right around the corner I wanted to try his Ultimate Potato Salad.  I love the addition of capers and there’s also the secret ingredient, lemon, that makes it taste really bright. Bring this dish to any party, and I’m pretty sure you’ll get invited back!

Rachel Ray Grilled Fish Tacos are a healthy alternative to my favorite fish tacos which are  fried.  Roasted corn salsa and melted Jack cheese make this a tasty taco.  Serve along with Mexican rice for a fiesta at your house tonite.

Easiest Grilled Chicken Ever

Grill Mates Montreal Steak Seasoning isn’t just for steaks. It tastes great on grilled chicken and even on oven roasted potatoes. Williamson Bros. BBQ Sauce is great as a dipping sauce for the chicken. Add corn on the cob or your favorite vegetables to the grill and your entire meal is ready in about 15 minutes.

Grilled Veggie Salad

Grilled Veggies add great flavor to salads.  My favorite combination is grilled corn and asparagus topped with chopped avocado and sun-dried tomatoes.  Grilled Portobello mushrooms, zucchini, eggplant and red peppers are some other veggie choices you’ll want to try.  I like to top it with a Balsamic Vinaigrette.
