Salsa Verde Taqueria Del Sol

Salsa Verde from Taqueria Del Sol gets its green color from tomatillos, the main ingredient.  They give it a bright flavor along with fresh cilantro and fresh jalapenos.  Taqueria uses whole jalapenos, seeds and all,  in their salsas, so if you’re a wimp you might want to add a little less than they do.

The next salsa is roasted and its full of flavor.  Check back later in the week to get that one too!

Salsa Verde Taqueria Del Sol

2 cups canned tomatillos, drained (1 28 ounce can)
1 clove garlic, rough chop
1/4 onion, diced large
1 jalapeno, rough chopped (with seeds)
1/4 bunch cilantro
salt (may not be necessary)
1 tablespoon vegetable oil

1.Saute over medium -low heat garlic, onion and jalapenos in vegetable oil till soft but not brown. (don’t add any color to it, just sweat it a little)

2.Combine all ingredients and puree in blender or food processor till smooth. Salt if needed. (I did not add any salt to mine)

    • Hey Maggie! I just made this again yesterday and tried it with fresh tomatillos from the Buford Highway Farmers Market. It was twice as good! Let me know if you make it. How’s Augusta???
