Mexican Rice and Chilis Chicken Fajitas

Mexican Rice is a great side to serve with Chilis Chicken Fajitas. Chopped tomatoes and green onions add great color and extra flavor. Veggies can make meatless  fajitas with Mexican Rice, sautéed peppers, onions, and all the toppings.  And don’t forget the margaritas!

Mexican Rice

3 Tablespoons vegetable oil
1 cup uncooked long-grain rice (not instant!!)
1 teaspoon garlic salt
1/2 teaspoon ground cumin
1/4 cup onion, chopped
1/2 cup tomato sauce ( be CAREFUL not to add the WHOLE can! ) **Use 1/2 this if making T Liz skillets
2 cups chicken broth

Heat oil in large saucepan over medium heat and add rice.  Cook, stirring constantly, until puffed and golden.  While rice is cooking, sprinkle with salt and cumin.  Stir in onion and cook until tender.  STIR in tomato sauce and chicken broth; bring to a boil.  Reduce heat to low, cover and simmer for 25 minutes.  TURN HEAT OFF and LET SIT FOR 5 MINUTES.  Fluff with a fork.  GARNISH WITH CHOPPED TOMATOES.  Can also garnish with chopped green onions.
