Spinach Salad with Gorgonzola, Pistachios and Pepper Jelly Vinaigrette

Hot Pepper Jelly in a salad dressing? I was surprised to know it was the secret ingredient in this delicious vinaigrette from one of my favorite cooks, Tim.   Toss baby spinach, gorgonzola and pistachio nuts together with the vinaigrette and you’ve got a great tasting salad.

Fresh Hot Pepper Jelly makes all the difference in the taste of this salad.   You can usually find it at local farmers markets or Whole Foods grocery store.   My favorite brand is from Fairywood Thicket Farms and it’s sold at the Peachtree Farmers Market in Atlanta.  You can order any of their delicious jams and jellies from their website.

Spinach Salad with Gorgonzola, Pistachios and Pepper Jelly Vinaigrette

1/4 cup pepper jelly
2 tablespoons cider vinegar
1 tablespoon extra virgin olive oil
1/8 teaspoon kosher salt
1/8 teaspoon freshly ground black pepper
8 cups fresh baby spinach
1/4 cup crumbled gorgonzola cheese (double it)
1/4 cup roasted pistachios (double it)
1/4 cup pepper jelly
1. Place jelly in a 1 cup glass measure.  Microwave on high for 30 seconds.  Add cider vinegar, olive oil, salt and pepper and whisk until blended.  You can do this in advance, refrigerate, but bring to room temp before using.
2. Combine spinach, cheese and pistachios in large salad bowl.  Drizzle vinegar mixture over salad and toss well.  Serve immediately.
