Fried Rice

Have it your way when you make Fried Rice at home.  Anything goes, add your favorite vegetables, eggs, and meat if you like.   Nuts taste great as a topping and I like to use cashews the best.

My favorite sauces to add 4 flavor are soy sauce and sesame oil, Veri Veri Teriyaki Sauce or Mr. Yoshida’s Stir Fry Sauce.  Target carries Veri Veri Sauce and the only place I’ve found Mr. Yoshida’s Sauce is at Costco.  Any of these sauces make great Fried Rice and an easy one dish meal.

Fried Rice

rice, cooked and chilled
any of the following:
carrots , cubed
onion, chopped
bean sprouts
mushrooms, sliced
sesame seeds
green peas, frozen
shrimp, ham, or chicken (optional)
canola oil
Veri Veri Teriyaki Sauce, Mr. Yoshida’s Stir Fry Sauce  OR:
1 tablespoon soy sauce
1 tablespoon sesame oil
**cashews (can top with these and it tastes great)

1. Bring a pot of water to a boil and boil the broccoli and carrots until tender, just a couple of minutes.  Heat oil over high heat in deep pot.  Let it get very hot.  Saute meat if using until cooked through.  Add additional oil if needed to saute onions until translucent.  Remove from  pot.
2. Add a little oil and reheat.  Add about 4 eggs and saute.  Remove when completely cooked.
3. Add a few tablespoons of oil.  Heat until hot and add cooked rice.  Add about 2 teaspoons or more of sugar if NOT using Veri Veri Teriyaki Sauce or Mr. Yoshida’s Sauce.   Stir fry.  After a few minutes, when rice is hot, add back onions, broccoli. carrots and any other veggies and eggs.  Add soy sauce and sesame oil.  Mix well and serve hot.
4. **Soy sauce and sesame oil amounts are for 1 cup UNCOOKED rice that equals 2 cups after cooking.
