Chicken Tostadas

Chicken Tosdadas are quick and easy.  They may sound like the usual tosdadas or tacos but what goes on at the end makes them really unique and different, and different in a good way.  These are great to throw together at the last minute if you haven’t figured out Whats 4 Dinner Tonite.  Pick up a rotisserie chicken, cut up some lettuce and tomatoes and your dinner is ready in minutes.   Top these with queso fresco, a squeeze of fresh lime, and the final three ingredients that make these tosdadas a meal to remember.

Chicken Tostadas

1 cup refried beans, divided
4 corn tostada shells (or use taco shells)
1 1/3 cups roast chicken, shredded
1 cup thinly sliced iceberg lettuce
1/2 cup chopped tomato
12 avocado slices
1/2 cup crumbled queso fresco or feta cheese
hot sauce, olive oil, and red wine vinegar for drizzling
lime wedges

Spread refried beans over tostada shells.  Top with chicken, lettuce, tomato, avocado, and cheese, dividing equally.  Drizzle lightly with hot sauce, olive oil, and vinegar; serve with lime wedges.
