Chopped Summer Salad

Easy, light, and delicious describe  this Chopped Summer Salad with Lemon Vinaigrette Dressing. I sampled it when I was shopping at Whole Foods and I knew I wanted to make it for myself.   It goes together in minutes. I like to add avocado but you could add any other ingredients you really like.  It’s topped with homemade Lemon Vinaigrette Dressing that’s light and full of flavor.  This would be a perfect addition to any Spring or Summer get together.

Chopped Summer Salad

iceberg lettuce or romaine lettuce or mix of  both, shredded and chopped
grape or cherry tomatoes, quartered
crumbled blue cheese
avocado, cubed
freshly ground black pepper

Lemon Vinaigrette Dressing:

3 Tablespoons fresh lemon juice
1/2 cup vegetable oil
2 Tablespoons sugar
2 cloves garlic, chopped
1 Tablespoon Dijon mustard
kosher salt and freshly ground pepper to taste
