This is the first of 3 recipes that go together to create the Best Portobello Burger recipe ever! It takes some time, but it’s well worth it. I am featuring the first part of the recipe today and a Horseradish Cream Sauce tomorrow. On the 3rd day, I will feature the Best Portobello Burger recipe that combines them all. This recipe comes from Fat Ronnie. I’m not sure who he is or where he is but I’m pretty sure he owns a restaurant somewhere. We know we can’t eat these everyday, but when we do eat them, they are delicious! And, I am from the south ya’ll.
Fat Ronnies Fried Onion Rings
2 cups flour
1 1/2 teaspoons salt
1 teaspoon ground pepper
1/2 teaspoon baking powder
1 cup buttermilk
1 large sweet onion, 1/2-inch slices
vegetable oil for deep-frying
1. Place buttermilk in one bowl and set aside.
2. In a separate bowl, mix flour, salt, pepper and baking powder.
3. Heat oil to 350-360 degrees for frying. Recipe calls for 375 but I think that is too hot.
4. Dredge onion rings in flour mixture first, then dip in buttermilk. Coat with flour mixture again. Place onion rings in hot oil without crowding onion rings. When onion rings are golden brown, remove from oil and drain.
