And the winner of the Chicken Chili Cook Off is…….Smokey Chicken Chili!
You can’t go wrong with either of these chicken chilies but this was the winner by a slight margin because there are so many contrasting flavors ….white beans and black beans , poblano peppers and red peppers, etc. Any of the usual chili toppings taste great with this; cheddar cheese, red onions, sour cream, and cilantro. Little fritoes are my favorite topping because they add salt and crunch and make this chili even tastier but I forgot them, so add them to your list.

Smokey Chicken Chili
1. Saute first 4 ingredients in hot oil in a large Dutch oven over medium-high heat 8 minutes or until vegetables are tender. Stir in diced tomatoes and next 5 ingredients. Bring to a boil over medium-high heat. Reduce heat to low, and simmer, stirring occasionally 1 hour. Serve with desired toppings.



I love all kinds of chili. It’s a wonderful way to get lots of fiber. I can’t wait to try this yummy looking recipe!
