BBQ Baked Potatoes are just another reason to eat more BBQ. You’re probably used to eating it on a bun but here’s something new to try. Grab some take out chopped pork from your favorite BBQ restaurant and top a baked potato with it along with cheese, sour cream, and BBQ sauce. I got my Q from Swallow At The Hollow in Roswell. If you haven’t been, check it out. The food’s delicious!
BBQ Baked Potato
russet potatoes
cheddar cheese, shredded
BBQ, chopped pork
BBQ sauce
sour cream
Preheat oven to 400 degrees. Rub potatoes with canola oil and sprinkle with Kosher salt. Wrap each potato in two pieces of aluminum foil and seal well. Bake for two hours. Remove foil. Immediately add cheddar cheese so it will melt. Top with heated pork BBQ, BBQ sauce and sour cream.

Becky….next time you bake your potato, try something slightly different. Instead of wrapping it in foil, just leave it open in the oven (put a tray under the rack to catch any salt or oil that falls/drips. The potato gets a slight crust or crunchy skin, which makes it delicious and irresistible to eat the potato skin after you finish the inside of it.
Hey Len,
I try that next time. How long do you cook yours for and at what temperature?? I love crunchy potato skins!
