Cheese Quesadillas are such an easy dinner to make. I used Colby Jack cheese, a combination of Cheddar and Monterey Jack, chopped tomatoes, and diced jalapenos. The nice thing about quesadillas is that you can add whatever you like and it will probably taste good. Top it off with some sour cream and guacamole.
