Red White and Blueberry Cobbler

Warm Blueberry Cobbler made with fresh blueberries and topped with Haagen Dazs Vanilla Ice Cream is my favorite summertime dessert and it would be a perfect grand finale at your 4th of July celebration.

Blueberry Cobbler

3 1/2 cups blueberries (best with really large blueberries), or frozen blueberries – can add more blueberries, up to 6 cups
1 stick butter
1 cup sugar
pinch of baking soda (DON’T FORGET THIS!)
1 cup self-rising flour
1 cup buttermilk
1 teaspoon vanilla  (DON’T FORGET THIS!)
Haagen Dazs Vanilla Ice cream

1. Preheat oven to 350 degrees.  Melt butter in 7 by 11 inch baking dish.  Pour blueberries into baking dish on top of the melted butter.  Mix 1 cup sugar, pinch of soda, 1 cup self-rising flour, 1 cup buttermilk and 1 teaspoon vanilla by hand  or mixer.   Drool mixture over blueberries.  Bake at 350 degrees for 45 mintues or until top is golden brown. **Serve with vanilla ice cream.

2. **If making 1/2 the recipe, use an 8×8 inch pan.  If using frozen blueberries, use the 12 ounce bag from Publix.  **Don’t forget to use the pinch of soda.
