Avocado Roasted Corn Salsa can be served as an appetizer with chips or as a side dish with something cooked on the grill. Grilling or roasting brings out the natural sweetness of vegetables and grilled summer corn is my favorite. Grilling the corn gives this salsa a great smoky flavor and works well with the creamy avocado. It’s perfect for a summer party or a college tailgate in the fall. Bringing this to any party will be a guarantee you’ll be invited back again!
Avocado Roasted Corn Salsa
1 ear grilled or oven roasted corn
1 ripe avocado, peeled and diced
2 Roma tomatoes, diced
1 small red onion, diced
1 tablespoon cilantro, chopped
1/4 teaspoon cumin
juice of 1 lime
1/4 cup olive oil
1/4 teaspoon cayenne
2 tablespoons rice wine vinegar
1/2 jalapeno pepper, diced
Slice the kernels off the ear of corn and place in a medium bowl along with the avocado, tomato, onion, and cilantro. Stir. Add the remaining ingredients and mix well.
