Homemade Hot Fudge Sauce is a comfort food of mine. Add it to ice cream to make a Hot Fudge Sundae and it’s a double comfort food. I love it the most topped with roasted almonds or salty peanuts.
Homemade Hot Fudge Sauce
2/3 cup heavy cream
1/2 cup light corn syrup
1/3 cup packed dark brown sugar
1/4 cup unsweetened Dutch-processed cocoa powder
1/4 teaspoon salt
6 ounces fine-quality bittersweet chocolate (not unsweetened) – I used ghiradelli dark chocolate chips and they taste great and melt really easily
2 tablespoons unsalted butter
1 teaspoon vanilla
1. Bring cream, corn syrup, sugar, cocoa, salt, and half of chocolate to a boil in a 1 to 1/2-quart heavy saucepan over moderate heat, stirring, until chocolate is melted. Remove from heat. Add butter, vanilla, and remaining chocolate and stir until smooth. Cool sauce to warm before serving.
2. **Sauce can be made 1 week ahead and cooled completely, then chilled in an airtight container or jar. Reheat before using.
3. **Rewarm this at a low heat. It can get scorched if it’s warmed up on high.
4. **Serve with Haggen Daz ice cream. It tastes so much better than the other ice creams and doesn’t melt as fast. Could use vanilla or chocolate or both or coffee.
